Hey mom, how was work? What’s for dinner? Do you mind if I take some pictures of the kitchen for our blog? Monday night dinner with my family, readers … come see!

Pretty kitchen, mom, but this is a cooking blog. Can I take pictures of what you’re making? Looks like Nala has sniffed the action out.

Good girl. What’s in the oven?

Mmmmm, cookies!!

I know you won’t let us eat those until after dinner. Can’t I just try one? (If you want to try one, skip to recipe below this post.)

High on shelf. Rats. Well … what are you making next?

Broccoli, turnips and red potatoes tossed in thyme and olive oil.

A big piece of salmon, seared with mustard and vinaigrette.

Still here? Oh yeah … you want that cookie recipe.

Very Healthy Cookies

1.5 cups rolled oats

1 cup flour (all purpose)

.5 tsp baking soda

.5 tsp salt

1 cup brown sugar

.5 cup butter

.5 tsp vanilla

.5 cup water

2 eggs

.5 cup pecans

.5 cup coconut flakes (unsweetened)

.5 cup dried cranberries or raisins

Preheat oven to 375 degrees. Grease 2 cookies sheets.

Sift together flour, baking soda, and salt. Chop pecans into bits. Cream butter and sugar til smooth. Blend in the water only after butter and sugar is smooth, until water+butter+sugar is smooth. Add beaten eggs. Stir in flour mixture, and add all other ingredients: nuts, raisins, coconut, vanilla. Mix!

Spoon onto making sheets. Bake 10 – 12 minutes. Edges will brown when done. Since these cookies have eggs, they are a little like cake. Don’t overcook them! Enjoy!
